Sweetcorn Fritters Recipe
(Makes 8)
Ingredients
- 2 oz (50g) plain flour
- 2 oz (50g) self raising flour
- A pinch of salt
- Black pepper, to taste
- 1 egg
- 5 fl oz (150ml) milk
- 2 tsp dark soy sauce
- 2 small spring onions, finely chopped
- 8 oz (225g) frozen, fresh or canned sweetcorn kernels (drain them well if frozen or canned)
- Oil for frying
Method
- Mix the flours and salt together in a bowl and stir in the black pepper.
- Beat the egg into the milk and stir in the soy sauce.
- Gradually beat the egg mixture into the flour. Stir in the spring onions and sweetcorn.
- Heat the oil in a flat frying pan and put a dollop of the batter into the pan, frying a few at a time. Cook on both sides for about two minutes each side or until golden brown.
- Keep fritters warm on a plate until ready to serve.
