Strawberry Jam Recipe
Ingredients
- 3½ lbs (1600g) hulled strawberries.
- Juice of a large lemon.
- 3 lbs (1300g) jam sugar.
Method
- Heat the strawberries and lemon juice gently in the pan, stirring constantly to reduce the volume.
- Add the sugar, stir till dissolved and boil until setting point (105°C/220°F) is reached. Use a jam thermometer or the 'wrinkle' test to check.
- Remove any scum on the jam.
- Leave the jam undisturbed to cool until a skin forms on the surface and the fruits sink (about 20 minutes).
- Stir gently to distribute the strawberries. Pour into warm, clean, dry jars and cover immediately with waxed discs.
- Seal jars when cold, either with lids or covers.
