French Onion Soup Recipe

Method

To serve, ladle into a warm soup bowl, float a slice of toasted baguette or similar on the soup and sprinkle with grated Gruyere. Place under a hot grill until the cheese is melted and browning.

This soup freezes really well and seems to cook better the more you make in one go, so double or triple up on the recipe and allow to cool before portioning up and freezing.

Stephen’s note: I personally like to make this a day or two in advance as the flavours improve and mellow slightly in the saucepan. A small glass of brandy poured into the saucepan as you reheat improves things even more!

Onion Seed 'Shirley's Giant Exhibition'

Thyme Plant - Thyme 'Silver Queen'

Lots of small lilac/white bell type flowers on upright stems with green oval leaves with pale green edges. Both a highly ornamental and very useful culinary plant. Lovely variegated foliage has a rich thyme scent and flavour with a hint of lemon. Pale purple-pink flowers.

Thyme Seed

Lots of upright stems with tiny pinky/white flowers towards the top, small green leafed foliage from the bottom to three quarters of the way up the stem. Top right, in the background a few pale, larger green leaves. Thyme likes a full sun position, is evergreen and a hardy perennial. Very aromatic, and great for Winter cooking!
