Description
Corn Salad, or Lamb's Lettuce as it is sometimes known, is a much underrated vegetable, providing a valuable source of fresh outdoor salad leaves through the autumn and winter months when little elsewill grow. And when the weather really turns in it can successfully be grown under cloches or similar unheated protection.
Corn Salad is a favourite winter and early spring salad staple of Raymond Blanc (who is a champion of using seasonal produce), and he regularly grows a whole greenhouse of it at the kitchen gardens of his restaurant - Le Manoir Au Quat'Saisons.
An excellent winter gap filler - both in the vegetable garden and at the dining table. Highly recommended.
- Sow August to September thinly in " (1 cm) deep drills 6" (15 cm) apart.
- Protect the emerging seedling from both birds and slugs.
- Thin the plants to 4-6" (10-15 cm) apart (and of course eat the thinnings!).
- Pick as required, but avoid stripping a plant bare.
- Top Tips
- Sometimes the leaves may become bitter to the taste; if this is the case, blanch the plants by covering with a box or pot or similar a few days before harvesting.
- Tempting as it may be, do not try and grow as a summer salad crop as the warmer temperatures invariably cause this to run to seed very quickly.
