Description
This variety of chervil is curled with fine cut, dark green leaves and annual. It is related to Parsley and produces white flowers and has long tapering roots.
Native to Caucasus but spread throughout Europe by the Romans, the latin meaning translates to 'leaves of joy'.
Now used widely in France for seasoning poultry and seafood because of its delicate flavour with faint tastes of liquorice or aniseed and sometimes known as French Parsley.
Chervil quickly looses its flavour when it is cooked or dried so is recommended to be used fresh or added just before serving a dish and is often used in salads, stews, soups or stuffing. It can also be grown as a micro-green.
Apparently the slugs are attracted to this, so it can be useful to grow near plants you don't want eaten! Alternatively you will need to protect it.
It is said that if you infuse Chervil into vinegar it can be used as a cure for hiccups!
- Annual, will self seed.
- Reaches 8 - 14" (20 - 40 cm) tall.
- Prefers a cool and moist position.
- Prefers shady conditions.
- Best planted in Spring or Autumn (but if sowing indoors as a microgreen could be sown all year).
- Regularly cut leaves to prevent bolting.
Culinary Uses
- Often used in fine herb selection.
- Great accompaniment for salads, soups, stews, stuffing, eggs, poultry, port, fish and potatoes

- Aids digestion and is a mild stimulant.
- Lower high blood pressure.
- Treat hiccups.
- Good source of vitamin C and beta-carotene.
